This weeks menu takes us full swing into summer! I am betting that most kiddos are out of school and swimming all day or attending camp. Seasonal fruits and veggies are at their best and farmers markets are bustling. I am on a tear to eat healthier! Our first vacation is over and it’s bathing suit day every day so a slim down is in need!!!
Monday – Chicken Cobb Salad with Avocado (minus the cheese and just a tad of bacon make it slimmer)
Tuesday – Fried Green Tomato BLT with Pimento Cheese (light on the pimento)
Wednesday – Teriyaki Tuna with Soy Glazed Brussel Sprouts
Thursday – Pasta All’Amatriciana
Friday – Pizza for the kiddos and a spinach salad for me!
