Yes, I said pear! I know it seems like an unconventional fruit to put in a smoothie, but it is so good. So when I saw a pear smoothie on the menu at a local juice bar, I just had to try it! Unfortunately, it was just on a seasonal menu for fall. So when fall was over, it was gone. I’ve recreated it so I could have it all the time.
It is actually very easy to make. This smoothie has the most fabulous flavors in it. And it is 100% plant based, so it is perfect for vegetarians too.
Here is what you need:
1 anjou pear, cored and diced
1 1/2 C. unsweetened coconut milk
1/4 C. raw almonds
1 Tbsp. coconut oil
Put all of the ingredients into a blender with a cup of ice. Blend until smooth. The pear smoothie will have a little chew to it because of the almonds.
For a full breakfast, instead of just a snack, pair the pear smoothie with some oatmeal topped with sliced almonds and sweetened coconut flakes. It’s my new favorite breakfast!
