Hello all! Have you noticed how late my posts have been this week? Well, that is how this recipe was conceived…. out of being late and pressed for time. Oh, and not wanting to eat tacos, AGAIN! So if you are like me and need a quick recipe that your family will love, this is it. Have some taco mac n cheese.
So it will look like a really long list ingredients, but its not that bad. If you make tacos every week like I do (because its almost the only thing my daughter will eat) you probably have all you need already.
1 box rotini pasta (cooked al dente)
1 lb. ground beef
2 Tbsp. taco seasoning
2 Tbsp. butter
2 Tbsp. flour
1/4 C. milk
1/2 pkg cream cheese
1 can Rotel
1 bag Mexican cheese blend
Preheat the oven to 375 degrees. While the pasta is cooking, make the beef. Brown the beef and the taco seasoning over medium high heat. Once cooked through, set aside. Once the pasta is cooked, drain and set aside.
In the same pan you made the beef in, make the roux. Melt the butter, whisk in the flower and cook for a couple minutes. Then stir in the milk and cream cheese. Whisk the mixture until it is smooth and lump free! Now add the Rotel and half the bag of cheese. Stir constantly until it is smooth (except for the tomato chunks from the Rotel).
Combine the pasta, beef and cheese sauce in an oven-safe dish. Top with the remaining cheese and bake for 15 minutes.
Serve with lettuce, tomato and cream cheese on the side.
