Summer calls for fresh food. Especially great salads! I love all of the fresh veggies that grow during the summertime. Cooking with them is so much fun and yields delicious foods. I also think of fresh seafood in the summer. Probably because I dream of the beach in summer, even if I am unable to get there. So wouldn’t you know, that I came up with a healthy and flavorful salad full of fresh vegetables and fresh shrimp. This is my Mexican inspired shrimp salad.
This recipe is super easy, as are all of my recipes. But it is also very healthy and makes the best use of seasonal veggies. Here is what you need:
1 avocado, diced
1 pint cherry tomatoes, halved
2 ears of cooked corn, cut from the cob
2 Tbsp. cilantro
1/2 lb. shrimp, cooked and peeled
1/2 Tbsp. olive oil
juice form 1/2 of a lime
salt and pepper to taste
Just mix all of the veggies and shrimp together. Season with salt and pepper and drizzle with the olive oil and the lime juice. Easy peasy. You could always add a little jalepeno for some heat.
