How is everyone doing these days? Still enjoying your summer? I am, but all of the “kid food” is beginning to catch up with me. Do you other moms know what I mean? You are serving the kids sandwiches and pizza and junk food at the pool…. and if you want to eat, you are digging in too. Sadly, it has caught up to me and it’s time to turn this ship around. I decided to use a farmers market haul to make a super easy, colorful and delicious meal that the whole family could enjoy. It is roasted vegetable orzo. And I topped it off with grilled chicken so it is literally a one dish meal.
If food was a rainbow, this is the perfect example of it. When you go shopping to make this roasted vegetable orzo, the more colorful you can get, the better. I chose to start mine off with grape tomatoes, 2 red bell peppers, 1 yellow bell pepper, asparagus, purple onion and eggplant. Talk about a rainbow!
Line them all up on a sheet pan and drizzle with olive oil. Then season with salt and pepper. Give everything a toss and pop the pan into a 425 degree oven for about 20 minutes, just until you see the tomatoes begin to burst and the other veggies are tender.
While the veggies are cooking, make the orzo according to package instructions. In case you aren’t familiar with orzo, it is just pasta that is shaped like rice. It is perfect when cooked al dente because it really does mimic rice. You can find it in the pasta aisle at your local grocery store.
Now for the sauce. It is a very light and fresh sauce that is super simple. You just need 1/4 C. of olive oil, 2 Tbsp. of honey and the juice and zest of one lemon. It is very light and adds just a hint of flavor. You don’t want to overpower the vegetable flavors but you do want to give the orzo a little something-something.
When the orzo is done, drain it and pour it into a large serving bowl. Then add the roasted vegetables. Drizzle the lemon sauce over the top and toss. Serve immediately.
I added grilled chicken to the top for the perfect one-dish meal. This roasted vegetable orzo is super healthy so you can begin kissing the pizza parties good by and get back on track!
