Don’t let this title fool you! It is much less complicated than it sounds. I swear! But it is healthy and delicious.
The only way to truly eat this is to buy the freshest piece of salmon you can find. And serve it with a side of fresh veggies. You will also need your favorite infused balsamic vinegar. Have you ever had infused balsamic before? If you haven’t, you must try it. These little oil and vinegar shops are popping up everywhere and they have the best combinations. For this recipe I used pear infused white balsamic. (the recipe will work with regular balsamic too!) These infused oils and vinegars also make for great salad dressings!
Roasted Salmon with Balsamic Butter Glaze and Toasted Almonds
1 fresh salmon fillet, 1 lb.
1 tsp. truffle oil
1 Tbsp. butter
1 Tbsp. infused balsamic vinegar
1/4 C. sliced almonds
salt and pepper, to taste
Preheat the oven to 350 degrees. On a parchment paper lined cookie sheet, season the salmon with salt and pepper. Delicately drizzle the salmon with the truffle oil and rub it in. Place in the oven for 20 minutes.
While the salmon is cooking, heat a small pan over medium heat. Once it is warm, toast your almonds. Put them in the pan until they get all golden. Make sure to stir them around often to avoid burning. Set them aside.
In the same pan, melt the butter. Add the balsamic. Mix them together well and allow them to come to a slow boil. As soon as it starts to boil, shut off the heat. It will thicken a little but not a lot.
Take the salmon out of the oven and place on plates. Drizzle with the glaze. Sprinkle on the almonds. Serve with a side of fresh veggies. Dig in!
