This is not going to be one of those fancy and fabulous blog posts with beautiful photography and perfect styling. This is real life. 4 people, 2 dogs, 1 cat, confined to the house and not really wanting to risk the grocery store without a Haz-Mat suit.
So what do I do? I raid the pantry and fridge to find the easiest thing to make that will still taste good and not consist of too much over processed food. And I’ll bring it to you every Monday on the blog and a video on my Instagram. (@brennastudiob in case you didn’t know.)
This week’s Monday Pantry Meal…. Pantry Pasta! Super easy and sure to please even the pickiest eater. Are you ready?
I scrounged up some mild sausage I had in the freezer, some spinach that I had in the fridge and a box of pasta. That is all. Just brown the sausage in a pan while you cook the pasta. Once it is all cooked through, toss a couple handfuls of raw spinach on top. Then mix in the pasta. I like to just spoon the pasta into the pan with the sausage and spinach using a slotted spoon. It adds just a touch of pasta water to the pan to make a slight “sauce” with the fat rendered from the sausage.
That’s it! Serve it up. I used an entire box of pasta and an entire pound of sausage, fed 4 people and still had leftovers. You can garnish with some parmesan cheese if you have some in the fridge. (I always do, but some folks don’t.). One less trip to the store after this one!
