OK, so lately I have been that mom that scrambles for something to make for dinner, almost every night. I search the pantry for just a few items that may go together and I hope for the best. But the other night, my thrown together meal was pretty darn good! Here is the recipe for the easiest Mexican beef stew ever.
I am definitely not lying when I say that it is super easy. It truly has 4 ingredients.
2 cans of Del Monte zesty diced tomatoes with green chiles
1 can of black beans, rinsed
1 lb. cubed stew beef, browned
fresh cilantro
Brown the beef over medium high heat. Pour in the canned tomatoes and rinsed beans and allow to simmer for 30 minutes. Sprinkle the warm stew with fresh chopped cilantro and that’s it. How easy is that?
If you want to add al little something, make some corn bread or corn muffins. They are the perfect compliment to this meal.
