During the warmer months, I have a signature cocktail. It is called the lemon Prosecco spritzer. It is light and refreshing, perfect for a summer afternoon at the pool or beach. It doesn’t hit too hard so you can enjoy responsibly. I made it for a friend when we were on a beach trip and she said “you have to write about this!”, so here I am.
The lemon Prosecco spritzer is an elegant drink, in my opinion, even if it is easy to make. There are only 3 ingredients: lemon, Prosecco and lemon flavored sparkling water. The elegance comes from how your dress the glass! I like to rim my glass in lemon sugar. I’ll teach you how.
First, wet the rim of your glass using juice from a lemon slice. If you use water, the sugar will slide right off the rim. The lemon juice has a little natural sugar in it to make it sticky and keep the sugar in place.
Next, dip the glass in a mixture of sugar and lemon zest. I use the lemon zest for the color and the added lemon flavor.
Carefully pour your prosecco and sparkling water into the glass so you don’t lose any of the sugar. I like to make mine half prosecco and half sparkling water. However, you can make it as strong or weak as you would like. It is also great without any prosecco, by the way!
