What on Earth do you do with those leftover vegetables from dinner? Reheated veggies taste like mush! Nobody in my family will touch leftovers, especially vegetables. Until now….. I have come up with a healthy, leftover vegetable recipe for lunch the next day. It is especially great if your New Year’s Resolution is to eat healthier. I affectionately call it leftover vegetable soup!
These veggies were left over from a roasted chicken dinner. It was roasted root vegetables (beets, carrots, parsnips) and potatoes. So here is what I did. I took all of the veggies and put them in a big pot. I added fresh thyme and 3 cans of chicken broth. I let it all boil together for about 20 minutes. Make sure to add more broth, salt and pepper, as needed. Because the veggies already have seasoning from the previous night’s dinner, you really don’t need to season them too much. You have already flavored them.
Once the veggies are nice and mushy, I let it sit and cool so it is not scalding. Then comes the immersion blender! (I love that little gadget!) Blend it all up until you have a nice and smooth, but thick, soup. Heat it back up and chow down. It really is that simple. And it is so healthy and satisfying on a cold winter day!
