We just returned from spending a wonderful week in Mexico! We enjoyed the sun and had lots of fun. My children got to learn some basic conversational Spanish and play all day. My husband and I got to actually sit and have a glass of wine together! We were purposefully lazy and lounged around the pool and read books and took naps. It was wonderful! In order to capture some of that vacation spirit and bring it home, I have devised a Mexican menu that the whole family will enjoy. Fiesta!
Beverage: Tequila Mojito

6 ounces white tequila
12 mint sprigs, or spearmint, 8 roughly broken apart
6 tablespoons fresh lime juice
4 tablespoons sugar
4 slices lime
In a sturdy glass, put the mint and 2 limes. Using a muddler, crush the mint and 2 limes to release the flavors. Add the sugar and other 2 limes and do the same until the ingredients are well incorporated. Fill to the top with ice. Add the tequila and finish off with club soda. Give it all a stir. You don’t want to strain this drink. The mint will continue to release its flavor.
Appetizer: Guacamole and Corn Chips
1 ripe avocado, pitted and halved
1/4 C. prepared slasa, drained
1 Tbsp. lime juice
Mash the avocado in a glass bowl. Stir in the salsa and lime juice. Add salt to taste.

Dessert: Coconut Helado
