Yes, it’s true! I have found a Super Bowl snack (or anytime snack) that is truly healthy. Well, at least healthier than your normal football food. Most football food is fried or cheesy or both. This one is neither. However, there is no sacrifice on flavor or satisfaction in this healthy Super Bowl snack.
One of my favorite football foods is loaded potato skins. But they are soooo bad for you! Sour cream, cheddar cheese, bacon, butter….. it is definitely a New Year’s resolution killer. This snack is also a great potato appetizer, but without all of the fat.
Do you like pesto sauce? I love it. It’s creamy and full of yummy basil and parmesan cheese. This healthy Super Bowl snack is very simply parboiled rainbow potatoes and pesto aoli. It is beyond easy to make.
First you need some rainbow potatoes, or some fingerling potatoes. Something very small by potato standards. You will want to wash them thoroughly because you won’t be peeling them. Then you will parboil them. Parboiling is when you cook something only partially, by boiling them. I like to add all of the washed potatoes in a pot of water and slowly bring it to a boil. Then I allow it to boil for 3-5 minutes before scooping out the potatoes and putting them in an icebath.
During the 3-5 minutes it takes for the potatoes to cook, you can make the pesto aoli. Just add 1 cup of basil, ¼ C. of olive oil, 1 clove of peeled garlic, ½ C. parmesan cheese and ½ C. mayonnaise to a blender or food processor. Blend until smooth. (If you really want to take a shortcut, use store bought pesto sauce.)
Once the potatoes are cooled, you can dip them into the pesto aoli for a flavorful snack that you won’t feel guilty about. It is a healthy Super Bowl snack that everyone will love because it is packed with flavor! And for any traditionalists out there that need unhealthy football food, it tastes great with french fries too!
