OK, ladies, I know that this time of year is when we ALL worry about having to put on a bathing suit soon. It’s sad that it causes us all so much stress. It shouldn’t! But one benefit to that concern is that we begin to eat healthier. If only we could maintain that all year round, then spring wouldn’t be such a stressor. However, Christmas cookies and summer BBQ’s get in the way, and alas, we worry about putting on a bathing suit. When we do decide to eat healthier, berry parfaits should be high up on the list and here’s how you make them.
I love to make these parfaits for breakfast or for brunch. They are oh so simple and full of fresh flavor. All you need are some fresh berries, yogurt (I prefer plain Greek, but use any kind you like) and lightly sweetened granola. You can choose any berries you like, as well. I prefer strawberries and blueberries because my kids will eat them too. But blackberries or raspberries are nice and add some tartness.
These are so pretty when you layer the fresh berries with yogurt on top and repeat, topping it all off with granola. I love to serve them in clear glasses. You can really see the layers of fruit and yogurt. It makes me feel super fancy even though these were practically effortless.
So now that the spring slim-down is in full effect, you have a simple and healthy breakfast to start you off on the right foot. And if you feel less than stellar when you put on that bathing suit, forget about it! Because I KNOW you are amazing!
