This one is for all of my Southern soul mates out there….. Don’t you just love a good summer salad? And a farm fresh peach? Well, what if you combined the two…… Let me just tell you, it’s awesome! This salad is all about the flavors of summer – peaches, arugula and the grill. It doesn’t get much better (or easier) than this great summer salad.
This salad has only 4 ingredients. Seriously. So you can make it in a pinch. And I promise it will be a crowd pleaser.
Ingredients:
1 sweet peach
1 bag of baby arugula
1/4 C. blue cheese crumbles
Brianna’s French dressing (to taste)
The sweet peach is made even sweeter when you grill it. It caramelizes all of the natural sugars. Mmmmmm! Then you add in some spicy arugula, creamy and pungent blue cheese crumbles and Brianna’s French salad dressing and you have a winner.
I had some peaches lying around and just sliced them in half and removed the pit. And I always have arugula, blue cheese and Brianna’s French dressing in my refrigerator. (Really, I do.) I grilled the peaches at the same time as I grilled my meat. I didn’t put the peaches directly on the grill. I put them on the rack above the meat. Then just before I took the meat off, I brought them down to char them just a bit. Once they cooled, I thinly sliced them. In a bowl I combined the arugula, blue cheese and dressing. Then I placed the peaches on top when I plated.
I served this salad with peach balsamic marinated pork chops and basil risotto. My husband said it was one of the best meals we have had in a while. I promise you, you won’t be disappointed with this peach and arugula salad.
