Can you believe that it is back to school time? I don’t know where the summer has gone! We are savoring the last little bits of freedom before Monday. There is a lot of pool time and relaxing going on this weekend before we begin on Monday. So here is a sweet (and healthy) treat that you can enjoy poolside as you soak up the last moments of summer.
These are so easy and so yummy you won’t waste any time in the kitchen when you should be out in the summer sun.
Cut up your favorite berries into small chunks and sprinkle them with a teaspoon of sugar. That is just to get the juices flowing, not to sweeten them too much. At this time of year, they should be pretty sweet. Then you mash them up with a fork or other mashing utensil.
Take out your favorite popsicle tray. My favorite is the Zoku popsicle maker.(affiliate link) Fill your popsicle spaces up about 3/4 of the way with either sweetened coconut milk or sweetened almond milk. Then spoon in your mashed berries. Stir to mix before the liquid starts to set.
Allow the pops to freeze and then serve. It’s as simple as that!
