Is anyone else out there addicted to Homegoods? (Silly question.) I can’t pass by one without going in. As I picked up cute things that appealed to me here and there, I noticed a theme. Can you guess it? Flamingos! They are everywhere this season and just too fun to pass up. So I decided to have a little lunch, at my friends house, with all of my flamingos. This flamingo themed lunch was a hit and super easy to throw together. Here’s how….
Keep it fun!
I want you to meet Pinky…. she was the mascot for this little lunch. It was absolutely hilarious watching this huge flamingo float around the pool. No matter what angle I tried to shoot from, she kept trying to creep her way in. Pinky is definitely a camera hog! But it made us laugh and added a little whimsy to an afternoon lunch. I had also picked up some great flamingo plates and some flamingo glasses. It was perfect!
When I was planning this lunch, I tried to figure out how to stick with the theme in the food. I decided to think pink and serve a crisp watermelon salad. It was so good! I also found a very refreshing and delicious pink grapefruit prosecco to serve with the lunch. It was the perfect poolside drink – low in alcohol, light and sweet, and pink! That prosecco was the perfect color to match my pink and gold flamingo plates. See how I’m thinking pink? It all came together beautifully!
Keep it simple!
I only served salad for this flamingo themed lunch. I felt that we should keep it light and simple. The salad was a watermelon and arugula salad. I made it with cubed watermelon over arugula with feta cheese crumbled on top. I made a nice vinaigrette from olive oil, white wine vinegar, dijon mustard and lemon zest. So easy! The grapefruit prosecco I found at Trader Joe’s and I will be going back to purchase more because it is such a hit!
Easy is elegant!
A simple lunch, wonderful friends and a gorgeous setting are all you need for effortless (almost) elegance. And Pinky… you definitely need a Pinky floating in the pool. By sticking with the theme, serving a fresh salad and a crisp cocktail, this flamingo themed lunch was elegant. I kept all of the serving dishes white so as not to overwhelm with pink. I find white serving dishes to be the best and definitely the most elegant. It allows the food to be the star!
This flamingo themed lunch was a great excuse for me to use some of my Homegoods finds, take over my friend’s gorgeous back yard, and spend some time with my friends. So next time you find yourself collecting a little too much of something on your shopping trips, figure out how you can incorporate it into your life and share a good time with friends.
