I hope you all had an amazing and wonderful Thanksgiving! And I hope you are recovering well. Especially if you are braving Black Friday. I never do. I wait for Cyber Monday. I like to shop in my PJ’s.
Anyhoo, I’m sure the last thing on your mind is cooking. But I just wanted to quickly share some of my favorite recipes for this time of year. They are warm and cozy and showcase the flavors of the season. These fall recipes are sure to please everyone as we ease into winter and Christmas.
This Butternut Squash Soup is my favorite. Any type of soup is my favorite this time of year. And this one is hearty but light. Dig in!
Another favorite is the Butternut Squash Risotto. It is the perfect side dish to any meal. Although people think risotto is difficult, I disagree. Pour yourself a glass of wine and just keep stirring. If you walk away, it will all go south. Keep and eye on it, add liquid as needed and stir. It comes out perfect every time!
This one is good for breakfast or dessert. Or a mid-day snack. It is so delicious, it’s like eating cake. Chocolate Chip Pumpkin Bread is a favorite of my daughter’s, and she is the pickiest eater ever!
I like a little spice when it is cold outside. And this Shrimp and Chorizo Fettuccini packs just the right punch. It’s a quick and easy dinner meal for when you get home late from Christmas shopping or the obligatory Holiday concert.
When football is on and you don’t want wings or pizza, pop these little bad boys in the oven. Who doesn’t love a stuffed mushroom? This Stuffed Mushroom recipe is so easy but is packed with lots of delicious sausage and veggies, you will want to eat it as a meal.
How about one last little ode to pumpkin? Pumpkin Pasta, anyone? This is a great creamy sauce with plenty of flavor from bacon and pumpkin. Yum!
