Spring sports have begun over here. And it always puts me into a tail spin trying to balance where each kid needs to be and when, feeding them, finding the time to clean up, do homework and actually get some sleep. It’s craziness! But I have 2 words that changed the game plan for me – freezer meals. I am not kidding! Thaw them out the night before, plop them into a crock pot or one single pan, and dinner is ready in no time. So it can be a grab and go kind of thing. And everyone still gets the healthy meal they need to rock it out on the field!
The easiest way to do freezer meals, in my opinion, is to double a batch of something you are already making and toss the leftovers into the freezer. I do this all the time with things like chili or chicken soup. A family favorite is my marinara sauce. All you need to do is thaw it out, toss in some store bought meatballs and heat it up. Pour it over pasta and you are done.
Casseroles also freeze well. I found this Taco Casserole recipe and can’t wait to try it! My kids love tacos so this would be a hit. And we all know that lasagna makes a super easy and freeze-able meal. There’s another one to try.

Have you ever heard of Wildtree? It is a healthy and easy way to prepare meals for your family, when you are in a hurry. It took me about 2 hours on a Saturday afternoon and I have 10 meals.
You can also order spice mixes. My favorite is the beef stroganoff mix. It takes minutes to prepare and it is delicious. There are so many other spice mixes and sauces that I can’t name them all, nor have I tried them all. I am a big fan of the sweet onion jam as well. I could put that stuff on tree bark and it would taste good!
