I came up with this super easy recipe last week. My children gobbled it up like they were hungry beasts. Well, they kind of are…. Anyhow, this is the most simple and flavorful pork loin I have ever made. And you probably have everything to make it in your house right now. Enjoy my Dijon Brown Sugar Pork Tenderloin.
Here is what you will need:
3 lb. pork tenderloin
1/4 C. dijon mustard
1/4 C. brown sugar
1 sweet apple (honey crisp is what I used), sliced
Salt and pepper to taste
Preheat the oven to 375 degrees. In a shallow, oven safe dish, salt and pepper the pork loin to your desired taste. Then, slather it in the dijon mustard.
Once you have done that, sprinkle the top with the brown sugar.
Next, you want to score the pork loin, making each cut along the top about 1/2 inch deep. Place an apple slice in each one of the cuts. This will keep the pork loin moist and flavorful.
Roast the pork in the oven until the internal temperature reaches 150 degrees. This will take about 45 minutes.

I served my dijon brown sugar pork tenderloin with roasted potatoes and carrots. It would probably go best with roasted root vegetables or Brussel sprouts.
