Hello friends! What are you getting into this weekend? Back yard BBQ? Pool time? Vacation? Whatever it is, I hope it is fun! And if you are in the need for a dish to serve, I’ve got one for you. Cowboy Caviar! It’s the perfect summer dish to share.
This has got to be one of the easiest and tastiest appetizers you can make. It can also double as a salad if you like. Just double the recipe for a salad.
Cowboy Caviar
2 cans of black eyed peas, drained and rinsed
4 plum tomatoes, seeded and diced
1 can of fire roasted corn
1 avocado, cubed
1/4 C. fresh cilantro, chopped
2 Tbsp. olive oil
3 Tbsp. red wine vinegar (I like mine a bit more tart so feel free to add more.)
salt and pepper to taste
Mix everything together in a large bowl and serve with corn chips. And a margarita!
