Chicken Chili – A Game Day Favorite

Yep, it’s that time of year.  Time for the big game – the Super Bowl in case you’ve been living under a rock.  Me, I’m pulling for the Patriots.  Duh!  If you are wondering what to cook, here’s a game day recipe that will please everyone.  It is healthy, easy and delicious!  Chicken chili!

Are you ready for how easy this is?  I’m not kidding.  Here is what you will need:

3 chicken breasts

4 Tbsp. cumin

2 Tbsp. ancho chili powder

1 onion, chopped

1/2 red bell pepper, chopped

1 can chicken broth

2 cans fire roasted corn, drained

1 can cannelloni beans, rinsed

salt and pepper to taste

Toppings:

avocado, diced

cheddar cheese

tomato, diced

fresh cilantro, chopped

Place the chicken breasts at the bottom of your crock pot/slow cooker.  Sprinkle with salt and pepper.  Add the chopped onion and chopped red pepper.  Sprinkle the cumin and chili powder on top.  Pour in the can of chicken broth.  Set your slow cooker to low for 6 hours.

After 4 hours pour in your corn and beans.  Allow it all to finish cooking for the next 2 hours.  Then shred your chicken and mix together.  Add salt and pepper as necessary.  You can even toss in some cayenne pepper to jazz it up if you like things spicy.

Garnish with your avocado, tomato, cilantro and cheese.  Voila!  The perfect game day food.  You can even put it over nachos or set up a chili bar.  Enjoy!
