One of my daughter’s favorite meals is chicken and waffles. Breakfast for dinner. And considering she has been on a hunger strike since the day she was born, I’ll take what I can get. But I had to come up with a way to make that recipe more appealing for the adults in the family. That is where the sauce came in. And it was so good, I plan on making it more often.
I also jazzed up the waffles a bit, to make them more dinner friendly.
For the waffles, you will need:
2 C. Bisquick
1 C. milk
1 egg
1/4 C. shredded cheddar cheese
2 Tbsp. chopped chives
Mix it all together and cook them up in the waffle iron.
For the chicken:
1 pint of buttermilk
2 lbs. chicken tenders
salt
pepper
1 tsp. paprika
2 C. all purpose flour
1 Tbsp garlic powder
2 eggs
1 Tbsp. Sriracha
8 C. vegetable oil
Sprinkle the chicken with salt, pepper and paprika. Soak the chicken in buttermilk for at least 4 hours. (8 hours is best)
Mix together the flour and garlic powder in a shallow bowl.
Mix together the eggs and sriracha in another shallow bowl.
Pour the vegetable oil into a large pot and heat to 350 degrees.
While the oil is heating, add the chicken to the flour mixture, coat completely. Working in batches, dip the chicken in the egg mixture then back into the flour mixture to double coat.
When the oil has reached it’s temperature, fry up that chicken!
And make the sauce. You will need…..
1/4 C. honey
3 Tbsp. butter
1 Tbsp. Sriracha
Place all the ingredients in a microwave safe dish and heat it up for 30 seconds or so. Mix well.
Place the chicken on top of the waffles. Drizzle with honey Sriracha sauce and you have a meal the whole family will enjoy! Sweet and just a tad spicy.
