This past weekend was my daughter’s birthday party. And usually, I don’t bake. Ever. But after I was quoted over $50 for 2 dozen cupcakes, I decided to make my own. I knew that I could run to the grocery store for some store bought cake if I messed up! And I figured, as long as the frosting is AWESOME, the cupcake can taste like cardboard.
I found the best buttercream frosting recipe. Super easy and so good! Now, I will not brag about how fantastic my cupcakes look. Because they are nothing to brag about. But add a little pony to anything and little girls will love it!
Best Buttercream Frosting
3 cups confectioners sugar
1 cup (2 sticks) unsalted butter, at room temperature
1 tsp. vanilla extract
3 Tbsp. heavy whipping cream
desired food color
Using the whisk attachment on your stand mixer, blend together the sugar and butter on low until well mixed. Then increase the speed to medium for a couple of minutes. Next, add in the vanilla and whipping cream. Mix until fluffy. Add your food color and mix to incorporate completely. Put your frosting in the refrigerator for about 15 minutes because the butter may be a little melty. If not, just spread that frosting on your cooled cupcakes!
