Banana Bread French Toast With Blueberries

Do you ever let you bananas go bad?  Not on purpose, but because nobody eats them?  It happens a lot at my house.  And when they get over-ripe, I just make banana bread.  And when the banana bread is plentiful, I have to get creative.  So a fine banana bread french toast recipe was born.  The rest is history.

My favorite banana bread recipe is from All Recipes and I’ve been making it, without modification, for years.  Well, 1 modification….. it’s a recipe for muffins but I make it for bread.  So the first step is to make your banana bread.

 

Then you have to make it into french toast.  So slice it up and drench it in a mixture of egg, milk, cinnamon and nutmeg.  This is a great job for the kids.  It’s messy but necessary and kids love to get messy in the kitchen!

Fry it up in some butter in a pan until all sides are golden brown.

 

I like mine with some blueberry sauce on the side.  And it is so easy to make.  I add a pint of blueberries to a pan with sugar and orange juice.  Then I cook it up until the blueberries begin to burst and it creates a nice sauce.  Seriously simple.

This is a great weekend morning breakfast.  It’s just sweet enough for the kids to go crazy over, but just sophisticated enough for adults to enjoy, too.  And it makes the house smell so good!  All that cinnamon and banana and butter……. mmmmmm!

 

So give it a try.  Here is your step by step……

Make that banana bread recipe.  Then make your dredge with 2 eggs, 1/4 C. milk, 1 Tbsp. cinnamon and 1 tsp. nutmeg.  Just mix until the whole mixture is light and fluffy.

Heat a pan over medium heat and add butter to the pan.  Dredge your banana bread slices in your egg mixture and add to the pan.  Cook until golden brown (about 2 minutes) and then flip to do the same on the other side.  Repeat for each slice of bread, adding butter to the pan as necessary so it doesn’t stick.

In a smaller pan you can make your blueberry sauce with 1 pint of blueberries, 1/4 C. of sugar and 2 Tbsp. orange juice.  Stir often to mix and get the blueberries warmed on all sides.  Once the berries start to burst, remove from heat.

Sprinkle you french toast with a little powdered sugar and serve with your blueberry sauce.  Enjoy!
