I met a wonderful friend and colleague for lunch the other day. And both of us got the best salad. I swore, after wolfing it down, that I would recreate it at home. I am happy to report that it has been done. And I plan to make this a staple. When someone asks me to bring a salad to a party or dinner, this is the one I am bringing. It is definitely a salad to love!
Here is what you will need:
Roasted red peppers (jarred)
Creamy Balsamic Vinaigrette
This is how easy it is:
Dice up your roasted red peppers, maybe half the jar. You can add more or less to taste. Toss them with the mixed greens. Sprinkle some goat cheese and pine nuts over the top. Then drizzle the balsamic over the entire salad.
Easy peasy. And for a little protein kick, add roasted chicken or salmon.
